In unserer Kellerei keltern wir unsere Ribera del Duero Rotweine. Sie sind das Ergebnis einer Kombination aus manueller Weinlese und Auswahl der besten Trauben aus traditionellem Weinanbau und dem Gebrauch modernster Kellerei-Technik für die Produktion unserer Weinmarken Ribera del Duero 912 de altitud und Viejo Mundo. Das Ergebnis sind Qualitätsweine, die dank der Prämierungen beim Concours Mondial de Bruxelles, der Auszeichnungen Dekanter und Dekanter Asia und der Prämierung Envero für Weine der D.O. The new regulations to be applied for the qualification of wines entitled to the Denominación de Origen Ribera del Duero are adapted to the new quality standards demanded by Europe. In this way, from now on, the qualification of all Ribera del Duero wines, both for young and aged wines, will be made once they have finished their production process and are ready to go on the market, that is, when already meet all the quality requirements according to the Specifications of the Consejo Regulador de la Denominación de Origen Ribera del Duero

This new regulation provides continuity with the process being followed by the Consejería de Agricultura y Ganadería y el Consejo Regulador de la Ribera del Duero to advance the process of accreditation in the UNE-EN-ISO 17065, which will deepen the assurance of the quality of wines D.O. Ribera del Duero.

Thanks to the research of a group of scientists from the University of Cádiz of the Instrumentation and Environmental Sciences research group in collaboration with other Italian experts, they have developed an electronic tongue that is able of providing the winegrower with information on the optimal degree of maturation of the grape.

This electronic tongue is equipped with two sensors that register physical and chemical parameters, that analyzing the must and determining the optimum degree of ripeness of the grape. What they try to offer the winegrower is a fast and precise technique that allows him to know when the fruit is in its optimum state of maturation.
